Coffee is easily North America's favourite beverage. Anyone can see this by the massive line ups at Starbucks around the country. Still many do not know the history or origin of coffee. How is it harvested? Where did it originate?

Coffee first originated in Ethiopia and has remained their most prized food import, coffee has been around since the 9th century. From Ethiopia the Arab world expanded it's trade and coffee made it's way to Africa and then Europe. Of course from Europe it was brought to us in North America.

Coffee beans are grown on a tree and are inside a berry known as a coffee cherry. The outside of the berry is bitter but the inside is very sweet and incubated inside the flesh are two coffee beans. The beans are harvested North of the equator between September and March and south of the equator between April and May.

The beans are then dried out and the outer layers removed. The beans are roasted according to how light or dark. The roasting process takes the green raw coffee bean and turns it into the deep brown we all know it as.

Roasting Times

7 Minutes - Light flavour the typical kind you find in the supermarket

9-11 Minutes - Medium full bodied roast sometimes known as a "city roast"

12-13 Minutes - Dark roast sometimes known as the french roast

14 Minuets- Darkest roast known as the espresso roast. The beans actually smoke and the sugars in the beans caramelize and burn creating a darker colour.

the lightest roast has the most caffeine, as the roasting times increase the caffeine decreases.

That is the world of the coffee bean from Ethiopia in the 9th century to your cup in the 21st , one thing is for sure coffee has been around for a long time and will continue to be around for a lot longer .

Espresso coffee makers came into existence from man’s need for a faster cup of coffee. The espresso machines not only produced the coffee faster but also produced a better one. Initially in some machines they found some kinks to be worked out but the coffee maker inventors didn’t let little issues deter them.

Who invented the first espresso coffee machine?

Each record gives us different answers. Some record says, the first espresso coffee maker was invented by Louis Bernard Babaut in 1822 along with Edward Santais, who was the marketer of machine in 1843. It got the publicity in 1855 at the Universal Exposition in Paris.

According to the records, in an hour a coffee maker can produce one thousand cups of espresso coffee using steam to force water through coffee held in the filter. Every new invention has to bear risk and this espresso coffee maker was not an exception. It had a tendency to blow from time to time and sometimes it burned the coffee too.

The initial espresso coffee makers weren’t so easy to use. Operating them required some degree of skill and it left plenty of room for diversity. The intensity of the heat & the length of time were controlled by the operator and the water valve remained open. The coffee users could put in less coffee grounds & obtain strong coffee or use more water & get a diluted one.

Further records credit Luigi Bezzera, a manufacturer, with the invention of Espresso in 1903. Bezzera wanted to make coffee faster, so he added more pressure due to which ‘Voila’ the Fast Coffee Machine was born. This machine made coffee faster and better than any other machine. The machine invented by Bezzera used the force of steam to push water through a fixed filter containing coffee.

Even though Bezzera was skilled in inventing, he was lacking in the marketing talent to promote his creation. In 1905, Desidero Pavoni purchased the rights of the espresso machine and the product was successfully marketed, changing the way everyone drank coffee. The coffee makers were sold throughout Europe by Pavoni.

Franceso Illy created the first automatic espresso coffee maker. In 1935, Illeta invented the coffee maker and used compressed air instead of steam for his machine. The problem of exploding espresso coffee makers was solved by this machine & gave a more stable result.

The espresso coffee maker invented by Achille's Gaggia bears his name in 1945. The lever action was included in his invention and even today we can get the modern versions of both Illeta and Gaggia espresso coffee makers. An electric rotating pump was created by Ernest Valente in 1950. The pump allowed a continuous, even flow of water through the coffee maker.

In 1970’s, Illy went on to simplify the espresso coffee maker process, when he introduced a machine that combined the best parts of previous espresso coffee maker methods. His machine used double filters, which costs less than other coffee makers and was simple to use.

Super automatic espresso coffee makers were born in the 70's. Now they are the standard coffee makers in many countries. The machines continue to evolve. The debate over which methods and which machines produce the best espresso will be going on as long as people continue to enjoy their cup of Joe.

First known discovery of coffee berries. Legend of goat herder Kaldi of Ethiopia who notices goats are friskier after eating red berries of a local shrub. Experiments with the berries himself and begins to feel happier.

c 1100
The coffee first trees are cultivated on the Arabian peninsula. Coffee is first roasted and boiled by Arabs making "qahwa" --- a beverage made from plants.

1475
The worlds first coffee shop opens in Constantinople. It is followed by the establishment of two coffee houses in 1554.

c 1600
Coffee enters Europe through the port of Venice. The first coffeehouse opens in Italy in 1654.

1607
Coffee is introduced to the New World by Captain John Smith, founder of Virginia at Jamestown... Some Canadian historians claim it arrived in previously settled Canada.

1652
The first coffeehouse opens in England. Coffeehouses are called "penny universities" (a penny is charged for admission and a cup of coffee). Edward Lloyd's coffeehouse opens in 1688. It eventually becomes Lloyd's of London, the world's best known insurance company. The word “TIPS” is coined in an English coffee house: A sign reading “To Insure Prompt Service” (TIPS) was place by a cup. Those desiring prompt service and better seating threw a coin into a tin.

1672
The opening of the first Parisian cafe dedicated to serving coffee. In 1713, King Louis XIV is presented with a coffee tree. It is believed that sugar was first used as an additive in his court.

1683
The first coffeehouse opens in Vienna. The Turks, defeated in battle, leave sacks of coffee behind.

1690
The Dutch become the first to transport and cultivate coffee commercially. Coffee is smuggled out of the Arab port of Mocha and transported to Ceylon and East Indies for cultivation.

1721
The first coffeehouse opens in Berlin.

1723
Coffee Plants are introduced in the Americas for cultivation. Gabriel de Clieu, a French naval officer, transports a seedling to Martinique. By 1777, 1920 million coffee plants are cultivated on the island.

1727
The Brazilian coffee industry gets its start from seedlings smuggled out of Paris.

1750
One of Europe's first coffeehouses, Cafe Greco, opens in Rome. By 1763, Venice has over 2,000 coffee shops.

1822
The prototype of the first espresso machine is created in France.

1885
A process of using natural gas and hot air becomes the most popular method of roasting coffee.

c 1900
Kaffeeklatsch, afternoon coffee, becomes popular in Germany.

1905
The first commercial espresso machine is manufactured in Italy.

1908
The invention of the worlds first drip coffeemaker. Melitta Bentz makes a filter using blotting paper.

1933
Dr. Ernest Illy develops the first automatic espresso machine.

1938
Nescafé instant coffee is invented by the Nestlé company as it assists the Brazilian government in solving its coffee surplus problem.

1945
Achilles Gaggia perfects the espresso machine with a piston that creates a high pressure extraction to produce a thick layer of crema.

1991
Caffè Carissimi Canada, a network of espresso service providers is formed in Canada, modeled after a visit to Franco Carissimi (roaster and equipment manufacturer) in Bergamo Italy. It becomes the fastest growing network of private and independant super automatic machines providers in Canada.

1995
Coffee is the worlds most popular beverage. More than 400 billion cups are consumed each year. It is a world commodity that is second only to oil.

There are many versions on the origin of coffee.  Outlined below is just one possibility of the rich history of coffee.
Coffee was only eaten long ago. African women would collect the ripe cherries from wild coffee trees, pound them with animal fat for the men to eat before any battles. This mixture made them tire less easily and as a result, they won many battles.
It was only in 1000AD that coffee first became a drink. The Arabs poured boiled water over roasted and ground coffee beans to create the first hot drink of coffee.
In Damascus and Constantinople, cafenets were created where people met to enjoy their hot coffee as well as play bridge, backgammon, discuss politics and music and write poetry.
In the 1650’s, coffee became popular in Britain, where students set up the Oxford Coffee Club, one of many coffee houses that sprung up in major cities.
All coffee came from Arabia until the late 17th century. Thereafter the coffee bean was smuggled out, and very quickly was being planted in other parts of Asia and Africa.
Very quickly, coffee became associated with the Age of Enlightenment.
Germany, Italy and France set up “Kaffeeklatsch”, coffee gossip, where women would meet, and literally gossip.
Democracy is what coffee symbolized in America. With its independence from England, a nation of coffee drinkers was created after the Boston tea party.
At the end of World War II, European migrants to Australia, introduced a new world of flavours and tastes. With their diverse culture, cafes and restaurants quickly emerged all over Australia.
Due to its multicultural history, espresso coffee is now enjoyed throughout Australia, with cappuccino topping the list in popularity.

While everyone recognizes the logo and knows of a local franchise, few people know where Starbucks Coffee got its name. The largest coffeehouse company in the world, Starbucks was named after the first mate in the book Moby Dick.

Founded in Seattle, Washington in 1971, Starbucks Coffee began growing exponentially. During the 1990s, a new Starbucks store was opening somewhere in the world every single working day. This continued into the new millennium, however domestic growth has since slowed down quite a bit. Abroad, however, the brand is still expanding rapidly.

Starbucks Coffeehouses began to give consumers a different kind of feeling about drinking coffee. Even employees, called partners, get a different kind of experience than one a regular barista would expect. Between two and six partners are working at any given time.

Coffee Masters are partners that have gone through extensive training in tasting, roasting, purchasing and growing regions. Starbucks Coffee offers full benefits to partners, including vision, health and dental insurance. Stock option grands are also available, as is 401k with matching to employees who work 20 hours a week or more. In 2005, Starbucks was rated the 11th best place to work in the United States by Fortune magazine. The same can be said of the UK stores, which were voted among the top ten best places to work by the Financial Times in 2007.
